I sear/brown them with chopped onions and garlic, salt and pepper. Then I add chopped peppers, more chopped onions, hot sauce (pick your poison), rum and a few spoons of a good salsa and simmer them. You want the chicken to have the flavor all the way thru not just on the outside. I dont have a time, but you'll know when they are done. Then I'll take them out and perhaps toss them with some hot sauce or bbq and then put them on the top shelf of a hot grill to crisp them up and get some smokey grill flavor.

I just roasted some eggplant and made baba ganoush. I like it super smoky, so I added this smoked paprika I found in our pantry. Good stuff!
