I find it depends on the cut. I would never want anything more than medium but generally prefer rare or medium rare. I used to work and travel with this guy who would order well done. I used to tell him you know that's the piece that they lifted out of the garbage and cooked the shit out of it.

Waste of good meat as far as I'm concerned. Agree with you with the choice of cut, though I usually just stick to ribeye or rump personally.
