Interesting. Pork chops here don't come with the skin. Also your cooking method. Not being critical just never would have thought to do it that way. Is that a bigger piece than Im thinking? I usually grill pork chops 1/4 to 1/2 in thick on high heat for a short period of time.
I just had the Fahrenheit/Celsius brain fart and missed the times and thought “that’s gonna be raw as hell or burnt to a crisp.”
I'm still wondering myself F or C. Three hours is a long time to cook a piece of meat.
It was Celsius and due to the size and I like my pork well done it was in for a while. What I didn't mention was after the initial high heat to get the skin crackling I covered it so it wouldn't burn and having the temp on 140 it slowly cooked it so the meat fell off the bone and was juicy as anything.

Don’t doubt it was good meat just doesn’t look appetising and not how I like to eat meat.
